I want to leave my Plant in veg stage, how long can I leave it in veg stage ? .reason why is because I want to grow the plant with out weed growing on it

I just saw my plants roots come out the bottom of the cup I put it in, so I transferd the plant to a bucket and I didn't have enough dirt to full up the bucket so my question is how long could I leave my plant like this ? . And what gallon size pot should I get for what weeks
