So yesterday's festivities made me realize that I had a jones on for Eggs Maledict. That is my variant on the classic dish ... I substitute smoked salmon (wild Nova lox in this instance) for the pork product, and in place of Hollandaise a dollop of homemade tarragon mustard mayonnaise. (I make it with corn oil as suggested by Cook's Illustrated.) Proper poached eggs and English muffins complete the feast.
It was served with a glass of Black Star Double Hopped and preceded by an apéritif of a smidge of Blueberry smudge. cn

I made steak fingers with a medium white sauce and roasted potatoes basted in an olive oil herb rub. I also made a salad with spinach leaves, baby corn, cherry tomatoes, feta cheese, red onions, black beans, with a raspberry vinaigrette. It was delicious. I did, however, manage to catch a roll of paper towels on fire. Took me hours to clear out the smoke in the house. I also managed to burn holes in my favorite t-shirt. It ended up in the sink with the smoldering paper towel roll.

New recipe. Total success. I found a recipe for cottage pie so I decided to try it out. I used ground beef as the protein and zucchini, carrots, snow peas, and cauliflower for the vegetables. The spices were salt, pepper, rosemary, basil and a dash of Worcestershire sauce. It is delicious (I'm eating right now). :p
