Not going to work with LED drivers as the sonoff dims a AC voltage and LED drivers need to be dimmed on the DC output side. Get a led PWM reef controller if you want a timer and dimmer capabilities

Nope! Most Sonoffs are limited to 10A/2200w or 16A/3500w because they use 10 or 16A relays. The 4 channel controller has 4x 10A relays, which means it could control up to 8.800w but you need to start the channels poe-a-poe, not all at the same time. To switch 20 gavitas on and off you would need two 4-channel Sonnoffs and one Dual, two thouies per channel(SE).
For 40 you need five 4-channel Sonoffs but they all controlled via the same app and you can virtually interconnect them. Which I would not recommend, because the high inrush current would probably destroy them.
But if you start the channels gradually, that's no problem.
It is also imaginable to exchange the relays for stronger ones to make them more durable against higher currents but I have not tried something like that.
I'd like to add control of fans, heater etc to my new build following ledgardeners 3'x 3' Bridgelux plan. I have a Raspberry Pi and an Arduino which take pictures and log temp/hum and would love to hear your suggestions for AC relays.

Sonoff has the TH(temp/humidity) model called SonoffTH so there is no reason for external relays. This controller can be used to switch according devices like AC, dehumidifiers, heaters or humidifier on and off based on temps or humidity. You can also create groops to switch more than one device on or off at the same time. But it can only be switched by temps OR humidity. To control a heater and a humidifier you would need 2 Sonoff THs.

Unfortunately they are not "flashable" anymore so its impossible to further use them with Tasmota firmware to use them on an own home server. But you can still find them with Tasmota installed on e3ay. The only way to get it installed is to flash an old official(signated) Sonoff firmware first where flashing custom firmwares was allowed and then flash Tasmota but therefor you need the old firmware.

If you still plan to used the raspi or arduino to switch external relays I would recommend to use relays switched by the same 5v. Lots of different relays boards are available on ebay but this way you could use the same driver you use to power the raspi/arduino.

Sucks they are no longer flahable. Not fond of using someone else's server.
If I didn't have the Pi, Arduino, and temp sensor and could grab a couple flashable Sonoffs I would use them. Instead I ordered this: https://www.amazon.com/gp/product/B00Y7SNHEW/ref=od_aui_detailpages00?ie=UTF8&psc=1 and as long as I can connect them without shorting anything I should be ok?

There are custom reef controller firmwares available to install on Arduinos but don't ask me where exactly. Maybe you can simply download and flash such a ROM..?!?
This thread could also be interesting.. The guy developed his own aquarium controller and all the features are also interesting for LED growers. And there should be links to other cntroller projects. With a little luck you'll find something that works for you.

RasPi/Kiasmos Project. Its a grow controller and we have a related thread here in the LED section but there's no new topic since a few months now. But I know they already do beta tests for at least 2-3 months so its possible that there is already a stable version you could install. As far as I know its all open source so the only thing you need to do is to say thank you. They plan to release ready to use controller and cheaper DIY kits with all the needed parts and a link to download the firmware. Its also allowed to just use their code and buy the needed parts yourself.
In my next LED build I'll definately integrate such a controller cuz it can work out of the box with Meanwells HLG/ELG drivers and can control ambient temps, humidity or CO²/fertilizer and PH. So you can literally control everything in your grow room with just one device and the according android/iOS app.
I have build a new remote driver case to have the driver outside of the tent and I've left enough extra space so I can install a RPI plus display later when they are finally available(DIY kit of course).

Quick question as i reread up these ones for testing (and there will probably be more stupid ones, sorry): sonoff TH with temp sensors, does it log temps and RH as well. Where, in the cloud?

No it doesnt keep a log. But you may be able to to copy the data sent to the app through another app if you want to log it.
