Do you have a "favorite" jerky recipe? I've never tried it before so have just grabbed the best looking recipe off the net.
Yea, but its not one you will find online.
I use soy sauce, minced garlic, black pepper, red pepper, worcestershire sauce, hoison sauce and sugar.

That is my marinade for it. I let it marinade for at least 24 hours before putting it in the dehydrator. I cannot give you the exact measurements because I never write them down, I go by smell and taste.

But it has a nice sweet and spicy flavor on top of the deer it is fantastic.

Sorry, I know that isn't exact, but its how I go about making just about anything. I found that if I attempt to use measurements for my concoctions I always mess something up.

It is much easier for me to go by smell and taste.

Exactly how i cook :-) sod a spoon of this, a spoon of that. My ribs taste different every time but they taste great every time. Other than the hoisin, that's exactlybwhat I used, although popped in a little smoked paprika. Thing I'd try it with oyster sauce sometime as opposed to hoisin. Can't wait for my dehydrator to arrive. Never knew they existed. Now I can make loads of dried fruit, and lots of dried fish :-) dried cuttlefish :O

I had a feeling you were gonna mention oyster sauce.haha... If it was my fiancee then she would love that, but not me, too fishy for my taste. I'll use the oyster sauce we have when I make my fiancee some curry or my attempt at making her some laos food.

But dehydrators are nice, they even work for quick drying buds without loss of potency or taste.
