So my worrying was unfounded, my plants seem to be doing well. Its been 4 days since they first started sprouting and you can just see the next set of leaves starting to form. I still haven't moved them to their final positions yet but maybe this afternoon or tomorrow I will move them.

Yeesh, so quick update... I'm getting worried about my plants because it's been raining with cold temps (about 5-10C) for like 2 days now. So hopefully they aren't stressed too much by the weather and are able to pull through. It's supposed to be warm tomorrow though.
