The medium is taking a bit to dry out as it is mostly compost. I gave it some powder rooting hormone, yes. So while waiting for it to bounce back, I just allow the leaves to basically curl completely under? The stem is very purple as wellWell sounds like it’s still too wet..
Roots won’t grow in too wet of a medium. It starves them of oxygen.
When it starts to dry out they will go searching for water/nutrient.
Give it a couple days, should bounce back.
Did you give them any root stimulant?

You run a feed cycle 5x a day. 1 at lights on and 1 right before lights out, with the other 3 evenly spaced between!
It will take 8 -10 days for your roots to "set" into the new media.....It'll never do it if you keep removing it to look at it!

Start counting your days today. Go 10...and it'll take longer, a lot, to see any type of root come out of the new cube.

She looks to be in need of eating by spreading her roots and simply growing.
Don't have a soaked soil around her for extended periods. A little watering around the plant, and a bit away from her will help.
I would have up-potted to a solo cup and let it root that out (bout 10 days) and then gone up to a big pot.... It helps.
No more peeking at the roots by digging or what ever - be patient.
