Tempura !
Pick up a couple boxes of tempura mix @ the grocery store, substitute beer for water when mixing and I always add about 1/8th cup of Tiger Sauce. Add in minced garlic and onion & a handful of shredded coconut.
Don't add too much beer though - you want the batter to be very thick. Now pat dry your prospective Fryee's, coat & fry halibut (or most any white fleshed fish), Scallops, Shrimp, mushrooms, broccoli etc...
