It is a very doable project, I'd order the parts and find an American pick and place service to populate the boards, and make sure to use the USA made, in marketing materials. Won't be cheap but it would have a killer efficient veg mode.
Second time I've heard someone specifically identify the US as the place for component population. Why is this? I live in the States and for me "made in USA" means "pretty much junk" although most purchases I'm referring to aren't electronics..
The thing is there are repercussions if a US company you pay to manufacture your stuff, makes grey market copies with inferior components.
In China, that kind of behaviour is celebrated.
