Each strain has to be re-harvested every year from its native region. That's why sometimes you get a super strong, freak strain. This is also why particular years of wine are more desirable. It's due to the natural yeast in the grape skin that year. AFAIK, nobody has found a way to keep it from mutating in storage.

Nothing has really changed when it comes to yeast. It's a strange beast.

When i brewed my batches 30 years ago 7% was the upper limit unless you used champagne yeast.
They now have a beer that is 67.5% abv
