My buddy just came back from a fishing trip in Alaska. He bought a small freezer from Lowe's to put 175 pounds of fish in it.

He gave me some king salmon, halibut and lingcod. I've already grilled the salmon. But I can't wait to try the halibut. I'm thinking I should pan fry it or bake it. Maybe even do ceviche?
I'll shoot you my favorite recipe for butt (or most any white fleshed fish really).
I promise you'll love it if done right.

Asiago Crusted Halibut

INGREDIENTS:
  • Halibut, rockfish, cod, most any white flesh fish

  • Fresh grated Asiago (preferred) or Parmesan cheese

  • Egg wash

  • Salt & pepper to taste

  • Parmesan breadcrumbs (50/50 w/ the cheese)
PREPARATION:

Mix Parmesan cheese & breadcrumbs, dip Halibut in egg wash & coat with cheese crumb mixture well. In a hot skillet w/ a bit of olive oil lay down a line of crumbs/cheese & place butt on top of it. Top dress fish w/ a bit more cheese/crumb mix.

Cook briefly (I said briefly asshole) until it is just beginning to brown & turn.

Dig in while it is still hot!

Uh that golden trout looks like a brook trout to me? Which isn't really a trout but a char.
I thought the same - colors are spot on for a Char, but then I've never seen (but I have heard of) a Golden trout.
Hooked deep too, huh?

Edit: After looking @ pics online of the Golden, I'm more inclined to say that looks like a Arctic Char (or Dolly Varden).

100% sure its a brookie. A planter also can tell by colors. Wild brookies are much more vivid in color but nice fish though!
