The bottom 2 leaves usually secrete a hormone that makes a plant bushy and short. Cutting them from the stem will induce an accentuated growth in height. This will also permit a better aircirculation and will lower bug and pest attacks.
Topping, fimming, LSTing or supercropping all reduce the growth in height or at least change the growth direction. Topping and fimming are stressful to a plant, it needs time to recuparate efter the shock and only half/quarter of the energy is put now into the different colas. Supercropping works best in order to limit height, while permitting light to shine on lower leaves and inducing a cola-like growth on all secondary stems.
In SOG, I'd personally use supercropping and I'd definetly cut the bottom 2 leaves.
