Why is it better to have more plants in smaller pots than less plants in larger pots?

I'm sure there is an easy answer but why do commercial grows use more plants than less plants in larger pots. Every large grow has many plants in a gallon of coco or rockwool usually in a 4 x 8' tray. Is there some max potential in yield per plant while indoors or is it just to maximize space under a trellis. If anyone can divulge some info that would be greatly appreciated.

Speed of generational turnover
 
This is how I grow.

Less veg, quicker filp.
Better canapy, without training.
More tops, less smalls and larf.

I can probably pull 2x the harvest as a scrog grower that will veg a plant for months. My veg time is usually a couple weeks, depending on strain.
