Okay thank you, so if I have a 5 gallon pot roughly 1.25 gallons of water until it’s dried up? Then water again

Well ... I am not sure that 1 gallon is required for a plant that has been in the bucket for 2 weeks. My general guide - whatever week they are in in VEG is how many litres they get 4 days apart. By the time they are 1 month after transplant they are ready for 4L every 4 days.
Always listen to Old Reefers - they seem to know weed stuff.
Those moisture meters are good for showing if the medium is dry enough for another watering. If you get one of those "moisture-LUX-pH" meters, you can ignore the LUX and pH readings cause those meters suck at measuring light and pH. But they do OK at reading moisture. You can get a little piece of mind for $20.

I don't know where they taught your AW classes but when performed in "sanitary" conditions it's perfectly safe.
