Back when Prince Albert was a popular item we put an apple slice it the bottom of the can. Works great.
It has been my experience that refrigeration will make it dry out quickly when at room temp.

Yes, colder air holds less moisture and will leech moisture out of material that holds more water than the air. That's why meats come out of the fridgs so dry.
I can think of a lot more attractive ways to moisturize buds than a dirty potato peel. Hell, a few drops of water in a closed mason jar will have the same effect. Water and mositure always seek level, so the drops of water will evaporate into the buds. You can also use non-tubers like orange peel, apple peel, and fan leaves (my favorite). Anything not grown in the ground with a jacket infused with dirt.
