Im having some serious issues with temperature control during the drying process. Temps jump between 65 and 80 humidity stays around 55%. Im worried about getting mold on my plants before they are done drying. Whats the highest the temp can get before it affects my plants?

Sometimes you just can't control everything. I don't dry in my grow room so I have to deal with fluctuations in RH and temp as best I can. I can deal with RH challenges !much easier than temps, to which I say oh well. Id prefer nice and cool but it's just not always possible. I'd say it more important to control RH than temp if you had to choose one. Extreme of either isn't good but I've had to dry in cold and heat and and my bud turns out fine. Big crops like outdoor harvests have always been dried wherever you had room.
