I pulled one of my girls when the trichs were half clear and half milky to experiment a little bit but when I looked at it after it dried it had amber trichs. Do they change in color after drying? I was looking for that head high and not much of a couch-lock stone with this one.

This is an interesting question to me also since I just picked an outdoor plant that seemed mostly cloudy and after one day of drying all trichs seemed cloudy and amber.

Sounds like you hit it perfectly IMHO. Just because you chop a plant, doesn't mean it's totally dead yet. The leaves and branches will try to carry on without roots for as long as possible.

Makes sense that there will still be ripening after it's picked until really dry.

Think a piece of fruit - still ripens after picked (I know, not quite the same but I think the anaolgy is close enough)
