hang it until the stems are dry enough to crack rather than bend, then jar it up for a few hours, take it out and it should be slightly moist again. let it dry for another day and then jar it up again. check it in a few hours. if it's moist again dump it out and dry it for another day. repeat this until it stays just dry enough in the jars. len let them sit for a week or two, make sure you check for moisture at least daily. once they're properly cured you can seal up the jars and keep them for up to a few months or you can just smoke the lot.
