Thick, creamy egg mayonaise cracked!

Okay it's not the edibles section, but this's not an edible canna product. First time I tried whisking-up mayo, it turned oit alright, but more like a sauce, and I added way too many flavours to it. Second time, it was thicker, but not very creamy.

Third time was the charm, it appears. Figure it'll be a good thing to learn for when I finally get some chickens and have fresh eggs.

I actually switched to Olive Oil when I ran out of Rice Bran oil, and found the Olive Oil seemed to overpower the mayonaise taste, but coconut oil would be interesting.

I figured, like baking bread, mayo's one of those base recipes that's worth learning/memorizing, and now it is. Much easier than bread of course, I got the urge to make some the other day for some sun-warmed cherry tomatoes and cos lettuce on a sandwich.

Man one day, I'll get around to baking the bread myself, at the same time as I have the fresh tomato, basil and lettuce and home made mayo.

*What* a sandwich *that* would be :)
 
What amazes me, is where the creaminess comes from. Even using three yolks, the rest is just vegetable oil and lemon juice or vinegar. Baffles me how it ends up tasting like it has cream in it.

The closest I can come to a pragmatic or logical conclusion, is the egg yolk - even so little as there is - gets so evenly dispersed as the emulsifier that the creamy taste comes from that, cos oil sure as hell doesn't taste creamy.
 
See that error message in my profile pic, I get that at least a dozen times every day, throughout the day, 502 errors tells me my browser's fine, the pipline is fine, the RUI server not fine at all.

Just happens randomly too - sometimes when I refresh a page, sometimes when I view a topic, there's no stopping it shatting itself countless times each day. And that's just for *me*.
