Should I veg for another week or two weeks?

Which plants were you referring to? If it's picture 3 it's just the HPS light making it look yellow.

I've only got 5 plants going so I definitely want them to fill out the grow room, so I guess I'll have to veg them for a few weeks more!

do you have height restrictions, or don't really care about yield? Reason for askin is because if neither, I would veg for atleast 5-6 more weeks correct whatever issues you have, top them multiple times, LST them bush them out and flower them your yield will be much higher. But you can pretty much switch them to flower anytime your ready.

Assuming you've at least a 400w, yes, I would veg for longer. 600w? Even longer
I was originally using a 600w, but due to day time temperatures I had to switch it out for a 400w.
I'm using a 1.2m x 1.2m x 2.0m grow tent, so the plants can't exceed 1.5 meters I guess. I was actually considering vegging them out longer and topping, but I'm a little nervous I'll end up fucking up and ruin my grow. I'm aiming for the maximum yield given my time constraints. I want to be harvesting by the end of December at the latest. Summer temperatures here are insane ( > 40 Celsius on the regular ) and I really can't afford to run an A/C to keep the plants happy.

depends on your goal height lighting more info in needed to give you proper info in return ! if I was you with my set up I would veg them for 2 more months. those are babies. but I not you.

1.2m x 1.2m x 2.0m Grow tent with a 400W HPS light. I have to harvest by the end of December / early January at the latest due to potential heat issues with the coming summer. Ideally I'd grow them until they'd fill out the whole tent, but I don't want to sacrifice bud quality just for a larger yield. I may throw in an additional 250w HPS without a hood in the flowering period though.

The larger the grow medium, the larger the plant will grow right? Taking vegetative period and conditions into account of course.
