Should buds be harsh two weeks after being chopped?

I chopped my second crop about 2 weeks ago. After maticulously researching it, I began the process of drying. After hanging upside down for between 5 to 7 days, they felt ready to be jarred. They have now been curing in jars for about a week now, however, I just tried some from different jars and they all seem to leave a slight harsh burning sensation in my throat. Is this simply because I am so early in the curing process, and will likely get better or go away after a full 3-4 weeks, or is this harshness set in stone? I've placed a hydrometer in some jars, the lowest RH was at 54-56%, and the highest was at 58-62% after sitting enclosed in the jar for 12 hours or so. Any help is appreciated!
P.S.- It doesn't smell or taste funny; Nothing unusual except for some harshness.

Boy is that a relief to hear! I was so confused because it smells and taste so great, just that lingering burn in my throat after blowing out the smoke. I thank you for your time and help Budzbuddha, happy growing!

I bought some boveda 62% RH packs to try and get the RH back up. From what I've read, while curing does keep happening, it is slowed down tremendously in the 55% to 60% area. Anyone care to chime in on this, I know my RH is too low, I guess I'm just curious if all hope is lost or, even if ever-so-slowly, curing continues to happen?...Thanks for all of your feedback everyone! Also, is it possible to dry weed too fast but still have it smell amazing? Mine smells fantastic.

My lowest reading at 54% went up to 57-58% after a full 24hrs, I jumped the gun a bit on that reading! I couldn't find anything anywhere that curing stops below 60% or 63%, only that it stops at 55% and below. According to everything I've read, it only happens at a much slower rate when you're as low as the 56-60% range. https://www.growweedeasy.com/drying-curing seems to have pretty accurate information that nearly all other sources agree with, even SimonD. I tried my smoke again after almost a week of waiting, and it is definitely smoother than just 7 days ago...same strain and same jar that was initially fairly harsh at 58% RH. Idk what's right and wrong, I just know this is the info I've found and results I've had. Have a good day everyone, and thank you so very much for your time!

Did u leach or feed till the end? Im guessing fed till the end

No, I leached for the last 7-12 days in DWC with straight RO...and I must've gotten lucky in that it didn't drop another few %, it has gotten quite a bit smoother although I can tell that it could've been cured far better.
