I know what pistils are and what the males look like.
I was just confused. Each node site is bearing 2 small leaves, but there is no sign of pistils yet.

How long does it usually take into flowering to have a definitive answer on sex.

Its been 1 week for me.

your at the same stage I am at for a few of my plants and they look pretty much the same. You are looking at the right area, the short thin green shoots that have been turning into new growth recently will start to swell a bit and if it is a female it will split and a little white hair will pop out, you can't miss it when you see it and if it just swells up and starts to look like balls then you have a boy.

I have been told that it usually takes around 10-14 days cause it takes close to this period for the plant to realize it needs to switch based on the new lighting (this is a very basic way of explaining it).

i know it sounds crazy but what happens if it doesnt show sex by this saturday (2 weeks).
Would that mean that it isnt getting enough darkness to flower?

different strains different genetics, just like people, some mature early, some are late bloomers. i wouldnt panic if it doesnt flower by sat. give it time and make sure that when you put them to dark theres no light whatsoever. NADA

 I'm willing to bet your gonna start seeing some signs very soon, I took a look at mine today and there is some evidence starting to happen out of the 4 I have, two are the same strain Bubba Kushberry, I have signs on two so far, one Bubba and one unknown bag seed.

Bubba looks like it has very tiny ball sacks that are starting to form and hang on one of the nodes, but I am not 100% but it is starting to look 60% chance a male on this one I am going to give it another day or so to make sure but I'm pretty sure I will be yanking that one. On the unknown strain I saw what looks like a white hair starting to stick out, so like the bubba I am pretty sure this is gonna be female but I'll give HER another day or so to make a final verdict...

Give them a few more days and I found these signs on only on or two nodes in the upper region of the plant... Good luck and hope this helps you, I'll let you know when the other two start showing

I am having issues with the camera that would be able to show you what I am talking about so pics might not be available before you need them.
