Totally depends on the strain, but IMO if you like it a lot, chop it as the farther you go the stonier it will get. Also, while you're gaining experience with grows/a particular strain, you can chop one branch per week until harvest. That way you have a linear timeline to go on for your next grow of the same strain.
Typically, most people harvest when 20% of the trichromes turn amber or thereabouts. They start out clear, and turn milky when ripening. If you have all milky but no amber, you're on the early end of your window and will get a clearer heady high. The more amber you develop the stonier it will be and the later into your window you get. Better just a bit early I think, as it will continue to degrade in your jars while you run through your stockpile.
If fully ripe, and it's too stoney for you, try another strain.
