The roots would stay much cooler if you dug them in. Maybe even up to 20+ degree's cooler...

Should I dig holes and fill with soil and use the pots like plugs. The soil here is sand. How big should the holes be?

Step 1: Dig a big ass hole
Step 2: Fill it full of potting soil
Step 3: Put your plant in it
Step 4: Take care of your plant
Step 5: Harvest
Step 6: ????????
Step7: Profit!

Well I am getting black leaf edges and have had 2 plants die.
Getting necrosis in some of the leaves, may be a ph def.

Yeah, get them into the ground with some nice potting soil. Water them regularly with subtle nutes. They'll bounce back.

Well we will see. I have moved them into the shade and have perfected the ph intake so thats all I can do.
The plants are on a rock shelf so I got about 7" down and hit fukin rock. So burying them is out of the question. Maybe next year I'll build raised beds.
Thanks for the help.
