what will happen if a female caught pollen at week 2 of flower. I heard people waiting til much later when harvesting seeds but i had to do it now, because its dropping lots of dust and i dont want it to hit anything outside that is flowering atm.

You're correct about using the fridge, but you can't just use a baggie. You gotta keep it in an airtight container. A bit of rice in there to help absorb the moisture, or a packet of silica gel would be great, I do believe. I'm certain on the rice, not sure if the silica gel packets were recommended for pollen storage, though. The logic is sound, however, just don't know if the silica will have a negative effect on the pollen.

Whatever you do, you can NOT let it get moist as the water will make the pollen useless permanently.

lol well neither of you awnsered my question. I am not storing the pollen it has already dusted the plant I wanted it to.... my question was since I did it at about week 2 of flower is it going to produce useable seeds because I have read to pollenate at week 5.

I see, sorry. Well only way to find out is let her go and see what happens, you have no choice now. I'm assuming you felt that enough pistil was showing to dust her so perhaps it did the trick, how much time has lapsed so far, again I assume not enough for you to see any seeds forming yet.

I don't know what else to say except wait and see.

The timing of the best pollination depends on a couple of things. First of all if you have a strain which is done say in 6 weeks you need to pollinate by the second week since you will need at least 4 weeks to produce viable seeds (this is just an average but seeds usually take 4 to 6 weeks to mature. Secondly the longer into flower you go before pollinating the female the more pistils you have to catch the pollen and produce the seed.
If I am just producing enough seeds for the next grow or two I usually pollinate a branch in the 3rd or 4th week as most of the strains I grow take 12 to 16 weeks to flower, if I am going to produce lots of seeds I will wait another week or two but try to have about 6 to 8 weeks before time to harvest. This ensures that my seeds are mature and viable when harvested.
Good Luck and Happy Growing
