PH Problem

So my plants have not grow for shit for being almost 3 weeks. Some plants are looking funky. Some had mushrooms growing. Someone mentioned mushrooms like acidic, and to check the PH. I never did cause the soil was "organic" and figured it was neutral and the distilled water I did test and was fine.

So today, I got home and was like, fuck, plants grow!. So I decided to flush the plants, but before I flushed, I test the run off water which was almost 8.0

So the only thing I had in the house was Tetra EasyBlalance. I hope this stuff will be ok for the plants. Anyways, it did lower the levels to 6.0-6.4. I only did 6 plants.(the worst looking ones)

Will this stuff be ok for my plants?

I use a 2 litter soda bottle full of water, then mix 1.25-1.5 teaspoons of vinegar to lower my ph from 8.0 to 6.2-6.5.
Before I did this my plants looked to be suffering from various nut deficiencies. After three days of so the plant started to grow rapidly.

I use a little concentrated lemon juice. A few drops to the gallon to go from 7.5 to 6.5. In a quick search I didn't see any problems with EasyBalance for plants. The only warning I saw:
