Hi there, when I transfer my little girlies into the room, do I run the exhaust/oscillating fan straight away (I’m thinking of waiting with the oscillating fan for a few days as to not create a hurricane in my room).

Well you do need air circulation, however you don't wanna shock them and dry them out. Perhaps on low and not too close.

Elevate the fan so it blows above the plants and under the light.

Yeah, you get to do mother natures job, and hopefully with a kind manner. It's amazing how well this plant can grow if it lives in ideal conditions.
