For all those pork belly fans. I put a whole one, skin off, on cure last week, split it into 2, smoked one for bacon, spice rubbed and slow cooked the other till soft and tender.

Forgot to take picks when they were whole. This is just before vac pack and freezer.View attachment 5277291
Our local BBQ dive has amazing pork belly and burnt ends. Their sauce is decent but the meat is amazing. I get it to go with no sauce and just doctor up some Sweet Baby Ray's bbq sauce and use that. I'm so wanting BBQ right now.

That's how I like smoked brisket. Covered in a good dry rub and once it's done it has a really nice bark. It would be a sin to cover that in sauce lol. Pork tends to be overdone at most BBQ places around here so I like some sauce to give it some moisture and extra flavor. The best I've ever had was from a place called Fat Matt's Rib Shack in Atlanta, GA. He had good live blues acts most nights and the best ribs I've ever had from a restaurant.

Today is Sourdough Day

I just found out this morning but it was too late to do sourdough so I made a yeast bread. It's the spirit that counts right?

Got a little dark as I got distracted with a new dog that's been keeping my hands full. It will still work with the chicken soup I have going on the stove.

Rough looking loaf but it's still bread.
