so back to hot sauces:

for mexican, i like el yucateca black version salsa picante de negra chile habanero

and tabasco and franks red hot are easy top 5
I like the el yucateca stuff too but don’t like the artificial food colorings they use. Trying my hand at my own this year. This has been fermenting in the cupboard for a couple of months, going to let it go at least a month more before I cook it down into hot sauce. It’s a mix of Tabasco and red habanero peppers. Made a batch in like October that was good but only fermented for about two weeks - looking for more depth with the longer ferment.
