Mold humidity and oxygen?

if wet weed was put into a mason jar and the oxygen was vacuumed completely out what exactly would happen to the cannabis? What about 85-90% cured weed?

i'm not 100% sure what happens in the curing stage aside from somehow bacteria eating the Chorophyl and sugar and converting them into THC but I'm not sure how the bacteria work. I've seen information on the Internet saying that the bacteria that does this process works without oxygen and some other sources of said that they need oxygen to work. If I remove the oxygen in weed that's been curing for 1month will the cure stop?

I want to vacuum some almost cured weed but don't know what to expect exactly
 
I have the jar attachment for my seal a meal, while alot of air sucks back in when you crack open a sealed jar, I did an experiment, I put an ant in a jar and sealed it.. The thing survived until I got bored and let it out 30-60 mins later. I would think a vacuum would aid in moisture redistribution due to lowering the boiling point. I did not notice any RH miracles after applying vacuum however.

I thought it was enzymes that do the work. Same deal with a green tomato turning red in my opinion. Ethylene gas speeds this up or is necessary for it, hence the paper bag for ripening tomatoes, to contain/concentrate ethylene gas. I can't quote any sources that they're aerobic or anaerobic but I see people claiming it's an aerobic process, so I'm just assuming that's true.

Until I see otherwise, I'm going to treat it like a green tomato turning red..You wouldn't expect a dehydrated green tomato to turn red and ripen.., etc...
