what temps is your room at? to cold will make your stems turn purple and to me watch how much water you are adding to the compost it looks on the wet side let it dry out a bit before you water again, its better to underwater than overwater the plants will look the same both will wilt and some people will add more water thinking its needs a drink making the plant even worse and it will kill it very fast! and it will take longer for the plant to recover that if the plant wilts from not enough water wich will mend its self with in minutes you can watch the plant pick its self up.

if you over water the roots are not working that means that the plants are not drinking or taking in any nutes they are drowning and shut down the plant will show nutrient deficiency of all kinds because its not getting any and will look like shit and then very soon will die.

Yes, test the soil with a runnoff test. Soil ph is WAY more important than water ph because the soil acts as a buffer. The internet is the best place to find cheap ph meters. Make sure you get a digital one as the others are pretty useless.
