I'm just curious towards the end of a plants life they start to take stores stored up nutrients from the leaves which then they start to change colors. Is this a example of fade

yes
depending on strain, some turn yellow, some turn to different color other than green.
when it starts to fade, its not only stored nutrients that is being used up but it also starts to destroy the chlorophyll content of the plant. that is why its important to time your fade to your target harvest date.
