How long do seeds continue to mature after harvest?

I harvested my plants exactly 3 weeks after selective pollination of a handful of lower buds. Most sites recommend to wait 4-5 weeks, but my trichomes were beautiful, and I didn't want them to cloud up on me.
Anwyay, all references say to let the seed ripen on the bud after harvest. I'm wondering how long seeds can keep ripening for? I just manicured two plants last night, and I only got 3 mature seeds, and the rest are still sitting, or starting to crack through the resin sacs.

Should I hold out hope that those immature seeds will actually finish ripening during the drying/curing process?

they ripen while growing not while drying. it's over.
