You will enjoy this site. Tons of great info. A quick Q. Are your jars upside down for picture purposes, or do you let them colonize while inverted?

Those jars had to be turned upside-down. Made the mistake of packing the jars a lil too tight. usually they'll stay upright unless plans are made for invitro.

They're wollongongs BTW. Got a single pin and another jar contaminated last night. nasty cobweb, a combination of too much water with a too tightly packed jar.
