Harvesting time... when to cut her down

Most of the hairs on the buds are turning amber. The main top bud has begun to grow more bud with white hairs. At this point shoud i cut the buds off with the amber colored hairs and let the top mature more?

other post very similar said you could harvets the fruit that is ready and the rest could continue to ripen on the vine. hope this helps
