I have 3 systems touching each other, they're about 40in x 25in. I figured putting a 420w rectangular LED board above each system would give me 1260w of LED. Do you think that would work to replace the 2 1000w HPS?

Well that's spot on the ratio I suggested; 2000/1260=.63 or 630W vs 1000W of HPS.
Given the other parameters I mentioned in terms of temperature and RH I think it should work pretty well.
When you mentioned this at first, I was under the impression you were running three 1000W HPS fixtures and that's why I said what I did.

Once you get over about 45w of LED output power per sqft of canopy, the returns on more power are diminishing unless you supplement co2. Have you measured/mapped ppfd on your canopy? Do you know what numbers you're hitting now?

I don't know the numbers, I just know that I have 2 1000w Hortilux HPS in air cooled hoods over a canopy of approximately 8ftx4ft. I have lower ceilings now than before, so I can't raise them as much as I'd like, so some plants top colas get a little heat stressed. I think LED would suit my setup better, so I'm trying to study a lot before I invest.

(420W x 3 = 1260W) / (8' x 4' = 32ft²) =
39.375W/ft² which isn't crazy but it's going to be plenty for LED.
I think you'll really enjoy the results.

39w per sqft of canopy is good to work with. Bar style LED's will spread the light intensity over the canopy so much better. There's still higher intensity in the center relative to the edges, but the light is spread out so much better.

You can have intensity wherever you want.
for less intensity in the centre, use four seperate cobs towards each corner, yet not on the corners
means tips and buds get light from every angle
and less intensity in the middle..

I have nearly 50 COB LED fixtures of my own design, 225W each. They work juuuuuust fine...

wow 225 watt cobs sound intense as hell...i used 52 watt each cobs and got smaller buds than HPS or metal halide buds yet so dense
a 5 cm high and 4 cm wide bud could weigh around7-9 grams..hps buds are fluffier imo and cobs smaller but denser
i like them smaller and denser= more room for more buds that small buds more of them yet weighing heavy

Honestly, the kind of light fixture stops being relevant....COBs, chips, tubes, bulbs....Weed will grow under all of them. Depending on the starting genetics and your skill as a grower, results may vary. I have (had) every kind of light and I've grown all kinds of weed under them. Sometimes, the least efficient light ended up growing the best weed....Other times, the most efficient light ended up growing the worst weed....genetics and skill level were the things that really made the difference. And both of those things take time to attain. It's taken me a long time to find the right seeds and my knowledge as a grower continues to improve with every run.
The entire efficiency war is for the gear heads to squabble over. It was kinda fun to read greengenes' and Growmau3's discussions....and Jeff from Area 51 (lol)...and Robin and Steven and then them making it happen with HLG....water-cooled lights from ChilLED....wow. It was crazy times. But now it's all super-complex-hybrid, auto flower bullshit. If I was just now starting to grow, I think it would suck to have to wade through so much bunk. Thank God I grew up in a time when marijuana was much less complex and much more incredible. No light fixture of any kind, no matter how efficient or what spectral output it has, will ever grow the quality of the weed that this one guy I met back in the 70's grew. And he grew it under fluorescent shop lights.
