i wouldnt use it for blueberries blueberries are acid loving plants they will not like the neutral ph of coco.
coco and compost works well for me with ewc and guano added. i go just water in 20gal plastic pots and just leave them be. but everyones different and if you cant make it work for you no shame in trying different methods till you find what works for you.

I'm using 2 gal pots and the 3 fox farms, Grow Big, Tiger Bloom, Big Bloom, Should I be using cal/mag as well?

more nutrients only make them grow faster if every other aspect of your grow is optimal. now for starters with blurples i kinda get the feeling that your problem with slow growth may not stem from a lack of nutrients but insufficient lighting. nutrients are the building blocks which a plant uses to drive photosynthesis to harvest energy and grow and if there is not enough light then the growth will be slow and subpar.
if your problem was with nutrients you’d see deficiencies or toxicities not necessarily slow growth at least not at first. now with purple light i dont see how your plants look so would you say your plants are suffering from deficiencies?

Plenty of light, grow medium is 6.2-6.5, temps are averaging 68-72, humidity 50-60, I've been underfeeding big time, only a capful of each in my water every other day, and I just started using cal/mag today. Leaves are burnt on the edges and look like a cal/mag deficiency. I am a newbie to this stuff so I'm learning from my mistakes lol.

How much light is 'plenty'?
Those cool temps will slow growth, should be around 10 deg. higher.

what is cal/mag deficiency? look i’m not trying to be a jerk here but there is no such thing as cal mag deficiency. calcium and magnesium are two different elements with very different deficiency symptoms. to me it looks like it may be potassium deficiency. not necessarily from a lack of potassium in the medium but maybe from overwatering or low temps of 68-72. you should get those temps up a bit under leds. and if its indeed a potassium def cal mag will probably make it worse.

actual power 280 w/ 1500 w equivalent full spectrum, another full spectrum with veg/bloom switch 120 actual watts/ 600w equivalent, a couple of smaller 8w led grow bulbs, and an actual 100 watt/ 300 wat equivalent light as well, so I would say around 516 actual watts.

This is too easy, if you put compost why you add so much more nutes on top ? Cow compost takes time to release and will support your plant (if you are in a big enough pot for the plant size) during the entire grow.
You burned them alive bro, not to be a jerk aswell just telling you the facts and how to proceed.
In my opinion don't ride it out, throw them away and start fresh, they are too burnt imo to recover into a good flowering cycle.
Next time follow these iron rules !
Temps - 25-30c
RH - 50-70
If you add compost to coco and perlite, add some peat aswell, and don't add nutes until the plant says it wants !
If you start with coco and perlite only, apply nutes in low dosage as the plant mature, without jumping into high values all of a sudden.
