Greenhouse grow. Lots of questions

this season I have been growing in a 12x50 greenhouse. I germinated seeds in March, planting in May, 6 ft apart, put up a 5ft wide net down the length of the greenhouse to scrog. 9 plants in total. I put up a second net around 5 fit in height. The plants have grown so huge the 12ft wide 11ft high space is totally overgrown the length of the greenhouse. Pm, mites, aphids have been my issue. I’m not a newb grower by any means. First year growing cannabis in a greenhouse for sure. I live in Canada and have aspirations to grow commercially when I can.
My questions for next season are: how do I plan my planting date so I get plants that finish 6ft or so high untopped so I can do 2 rows in my greenhouse with walking space. I can’t find any info on this. I’m mostly interested in top quality opposed to quantity. Craft cannabis is my direction.

If you want to keep them that small outdoors your probably gonna have to start way later, or top multiple times and work in the branches thru the scrog net(s). For reference I planted July 6th this year and a couple of my plants are 8ft tall. Also maybe try different strain selections that better suit what your looking for. Maybe indica dominant it keep it short?

You may have to do a few runs to find the right phenos of whatever strains you like best and keep them as mothers. I have 2 Gelato OG out there, one 4 footer and one 7 footer, if that 4 footer started early enough(seed pop April 1, transplant outside to 65 gallon pot June 23), she's a small sacked bush and probably will put out the same as the tall one.

This picture isn’t that recent, plants are way farther along. This is 12ft wide 10ft high. C13D80AC-BE98-42F0-A378-3773651CCF0E.jpeg There is 2 707 headband, 2 pink Kush, 2 blue cheese, 2 kali China and 1 Jack the Ripper.
I popped these seeds in March. Planted in May. It’s likely going to be trial and error next season to get the size I want. Maybe pop in April, plant in June. Or April 15 and plant June 15

less plants more netting, you cant do 2 rows in a 12ft wide green house unless you do autos.
