For breakfast????

Southwestern Egg Scramble

I beat three eggs to a nice froth. I mince 1-2 pods of roasted Hatch green chilis. 1/4 cup of onion chopped. 3 slices of bacon finely chopped. 1 cup medium sharp cheddar. half a potato grated (like hashbrowns). I cook the bacon with the grated potato. I then add the onions and cook until translucent. I add the green chili and beaten eggs and then the cheddar cheese. Cook thoroughly. Serve and enjoy. Muy delicioso!
