If you think of it as "controllable" vs "dimmable" then it might change you perception. The presents of the dimming(aka controlling) channel is the key. It is what allows you to control your lights in CA while you are away in Rome. Simple swapping out the 10¢ potentiometer for a raspberry pi, arduino, or another wireless voltage/pwm option... and you have the ultimate control from anywhere at anytime. As well as simple timer settings and such.
None of which are possible with an A version. So yes many companies just give a dimmer, but you can take it to the next level.

Or just the simple pleasure of working under normal, non blinding light is a benefit for many. From the warehouse full of photons that works 5 hours a day+ in the garden...to the guy in the tent that that that doesn't want light basting to the world when he opens his tent to work in an apartment. A simple knob dimmer will do that.

The spectrum will change on your HPS when dimmed but I don't think the LEDs do. Maybe someone else knows about the cob spectrum changing when dimmed. That's something I've never heard anyone talk about but I've wondered.

they do but its almost imperceptiple, most datasheets show colorshift vs current

I guess is what I want to know is if I dim them, would I feel the same results as if I had them too tend all the way up

what do you mean by "results"?

it would be less light, less power consumption, but more light *per watt*

If you can't raise your light & you see neg effects happening then dim if needed, otherwise blast that shit homie. Bump that sunrise/sunset stuff In flower IMO.
If you're vegging too you don't need full power.
It's nice be able to turn it down if it gets too hot in the room.

I bought 4 perfect sun 500 lights( 2000$)
Within a year or two 3 out of 4 had massive led failure
After trying to call him( Neil) multiple times he never answers his phone
After many frustrating emails I sent the lights in for repair and he has disappeared
Buyer beware

He is an advertiser on the 420 forum and was last online there yesterday. If I was you I would try and contact him there as he would be more compelled to defend his reputation and refund or repair your units if you approached him on a public forum.
