hey man sounds like you're goin down the right path.. sorta. when you say you'll plant them at 3am, why is that? you should really wait to plant the seed until after it has cracked and the taproot has begun to come out, there isn't really a set time schedule for germ'in seeds. they will all germinate/grow slightly faster or slower than eachother so just do it by feel.

as for the method, the paper towel method is pretty simple. just put the seeds in between a few paper towels and dampen them. don't soak them just keep them moist, put them in a ziploc bag and put in a dark warm place until you see the taproot like mentioned above. or, the way you switched to, and also my method is to just put them in distilled water, works pretty well for me, and its easier haha
