sure, cut them. but really I'd google "trichome harvest chart" and compare yours with the pics and read the info too.
internet pics/advice/ is sketchy. Compare the breeder flowering suggestion times to yours, think about how much water they've been uptaking, finishing plants will take less for instance. you could cut some bud off right now and dry it for a week or so and sample it. if you like it, chop it down.
 
I just flush every time I water- just so a bit comes out the bottom of the container. I know others do it differently, but this works for me as long as I've stopped the nutes early enough. No difficulties with staying lit, taste- ash is white/gray, not black.
 
just water only for the last 10-12 days with a little run off is fine. you just want them to use up anything lingering in the medium. "flushing" is kind of a loose used term for the process of letting the plant consume any unused nutrients in the medium, but many confuse it with trying to rinse out the medium. let the plant clean the medium by consuming what's hanging out in there!
