If it is cured correctly it will be best at about 3-6 months and then slightly degrade after that (imo).
Do not freeze it, you will lose the smell and taste.
Airtight jars are the way to go, I use 1.25 gallon ones from the Container Store.
Put it in a cool, dry (dark) place.
