Dude don't worry about roots coming out of the bottom of the pot. They only come out a bit and they stop because they're not picking up any nutes or water. It's normal in all plant pot growing.

Just another question (didn't want to start a new thread) - I've been looking at my bud leaves and they only are about half or 3/4 covered in trichs... so I'm in 2 minds of whether to cut the whole bud leaves out as much as possible and save the whole leaves for hash or just trim off the leaves...

I just skimmed over your post but roots growing out of the bottom of the pot IS normal. Root rot will only occur if your pot does not have suitable drainage and so water gets locked in the pot or your plant is CONSTANTLY standing in water. But yeah, I have lots of roots poking out of the bottom.
