Amazing whitecastle/steakn'shake hybrid.
as classic as it gets. No mustard, or ketchup. Like whitecastle, honestly better without cheese. Cheap buns.
This is the most authentic hamburger I can imagine.

Pay attention to his explicit instructions, such as balling the meat and steaming the bun. A thin and crispy "smash" is important too.

You can go more "steak n' shake" by flipping the burger BEFORE adding onion. These recipe makes them more "steamed". There's no butter or oil in the recipe. I recommend a 1cm square of butter or equivalent. A tiny tiny amount.

These burgers are a great alternative to driving. Everyone loves them, smells like fast food.

I don’t mind sharing recipes with this page as well better than eating shit food out of a jar or packet
I have a hard time eating many of the staples of my youth. And most would be disgusted by my true subsistence learning. But a true understanding of the large yet limited catalog I just feel when cooking. I believe I pissed a good sous chef or line cook off when I declined his Guyuto suggestion in favor of a Kiritsuke. As I have long mastered the standard french knife.

Finding chick peas to be a new delight beyond snorter boil. Only salad-sides in rarity as a youth. But not the-lowly bean portrayed.

Still searching for a butcher who can cut my marrow bones length-wise canoe style properly. Maybe I should try it with a surgical grade hacksaw and vise.

A cheap bench top band saw with a fine cut steel blade will out live you if properly cleaned. My dog demands one of these every othr day. I cut from frozen. And most people miss the real treasure marrow represents. LOL. 003.jpg004.jpg

I have to dig through my pics. Bt the standard chef knife sold in America. Double bevel. 10-14" Great blades when quality steel. But single bevel Japan makes them pathetiView attachment 4825779c for general purpose board work.
The knife looks like my henckels

I worked with a bloke chopped 4 fingers off on a band saw one day lol had to pick them out of the sawdust and put them in plastic cup lol,he got them sewn back on,the little finger ended up going black so they had to remove it ,was his own fault always ina hurry to do shit, and that’s why I still have all my fingers

Melt and lose product from from friction. And I swear I can taste the blade at above 35F.

Yes.An original and mastered. One of many German and true American high carbon elite blades of their day. Ready for a more precise instrument or extension of my my thought.
