Plants smell

My buds smelled like ungrounded coffee beans of some flavor is the best way I can describe it. When I smelled them today they had a more tart almost pickely smell. Just wondering if that smell will come back and if that's an indicator that they are over ripening or ripe etc? Also will it come back after the cure?

Hard to say, some strains will smell very different over growth cycle and into curing, like cheese varieties, while others retain a terpene profile that is pretty consistent, like a Durban. Not sure I'd recommend using smell as a ripeness test.
Yea it was more of an observation. It's just a pain in the butt with the 10 dollar RadioShack scope I got forever ago. The pistils at the top are withering, and most of the ones left elsewhere are amber or barely any white ones. Just curious about the aromas and if that changes over the plants cycle.

I'm just paranoid about this plant because its an auto and has been hot and humid most it's life.

you'll get a more accurate idea of what it's going to smell like by rubbing the stalk between two fingers and smelling that.
not a joke.....most of what you're smelling from the buds are the most volatile terpenes, and they will quickly fade after chop,
the terps that you can smell from rubbing the stem are the heavier ones that won't evaporate nearly as quickly, and will be closer to the odor after your cure

What strain? Extensive crossbreeding has different aspects of these plants maturing at different times. Rather than all at once at harvest time.

It's just a seed I got from one bag. I had another from another bag, but it didnt germ. Yea it smelled like un-ground coffee for a while. Then it had a more dank smell as the coffee smell went away. I could still smell the coffee smell just had to touch the buds. After I watered it the pickel-ish smell went away.

I have a topic in harvest and cure also. Hopefully my hygrometer is spot on. It shpuld be the way it was packaged.
