So what you're saying is taxes are taken at the point of purchase in most places and they really aren't voluntary ?
That effectively the stores etc. act as tax collection agents for their protection organization who will threaten any unlicensed people if they open a competitive store, bar or restaurant without also paying the protection gang. Isn't that about how it works?

Beans are cooked. I thought we had Rhizopus oligosporus, but it turns out we're using Rhizopus oryzae. Works just as well. We let it culture in an instant pot in Yogurt mode, so easy!

I had just read that one way to use the soybean pulp (okari) left over from making tofu is to make tempeh from it and R. oryzae. I've ordered some from Amazon.
Seems to me that now is the time to experiment with making slow food and maybe learn something about foods from our past.
