What's the purpose of "burping" jars?

When aging tobacco the whole idea of using mason jars is that you can heat them a little and put the covers on and create a slight vacuum to prevent air leakage. Purposely opening the jar repeatedly would make the jar pointless, would it not? You just create the vacuum and leave the jar sit for weeks or months, that's how aging works. And no, the jar thing is not "curing", it's "aging", curing is a completely different thing requiring different conditions. Fermentation is another completely different process requiring different special conditions. Cannabis preparation is in a very crude state right now and has been for decades. If you don't want to bother curing or fermenting it then why not at least age it properly?
