Whats going on with my plants

It looks to me, to be that they're transpiring more than they should. What's your humidity level like? Very rarely does someone actually have a nitrogen toxicity issue.
Try pointing the fan in a different direction or move it further away. And a foliar spray of epsom.

What do you think is the reason for yellow new growth and wilting?

New growth comes in a lighter green. The wilting, is (I believe) due to the plants taking up too much water. What are the temps and humidity levels like?

Thats not yellowing , it just looks like that because of all the fans dying off. Its way over watered or way overfed. Let her dry and give her plain water is all i can say for now. What kind of soil ?

Looks like they are over/under watered. Generally you only want to water when the top 1 inch of soil starts to dry out.

It could also be a sulfur deficiency. Sulfur is a major macronutrient for plants, but it is not mobile like nitrogen. When a plant begins running out of nitrogen, it will transfer it up from the lower leaves (hence why nitrogen deficient plants get yellow lower leaves first). However, when there is a sulfur deficiency, the top leaves and new growth become yellow first.

If you notice that the growth is stunted, you could consider supplementing with sulfur by using elemental garden sulfur, gypsum, or potassium sulfate.
