What would happen if I harvested this now?

I have two white widow autos which, time-wise, should be about ready for harvest. However, they have been slow to reach maturity. It's my first time and I have made some errors

It's hot here and the room they're growing in is really starting to stink - even with negative airflow, a carbon filter and powerful air fresherner

I want these harvested, dried and in air-tight jars ASAP. I live in an apartment. There's only one common wall and I can't smell anything if I stand on the balcony near the windows that are feeding them with airflow, but I'm getting anxious and really don't want cops at the door!

I'd like to know:

1. Besides tasting foul, what would I lose if I just stripped the trees today and started drying?
2. If I started flushing today, what % yield would I lose and what would the end product be like?

Appreciate any advice you can offer

You waste what appears to be a serious grow. Not even close. I would not. Pack a lunch and take a seat. My opinion.

Yeah I thought that would be the case. If I needed to be out of this place a month from now and I managed to suck it up til then, do you think the grow would probably be finished?

Is your carbon filter still good? Those things should do their job in the setup you mentioned. Personally, when I smoke prematurely harvested weed, it tastes harsh, gives me this jittery high for about 15 minutes and then I get the munchies. I doubt this would be something even remotely enjoyable to smoke at this point. I also wouldn't spray air freshner near my plants....

Yeah if it's that bad, I'll definitely not harvest now or any time soon. I'll try and find a way to manage the smell. I wasn't sure about the carbon filter. Like, it catches most of the smell. It's way worse inside the tent. But still enough odor escapes that you can detect it in the room where I've set it up and also on the other side of the door. I just worry that the smell is creeping into the neighbour's place below. The intake vents are taped below a cracked window, so I assume they suck most of the intake in from outside. I don't spray when the tent is open. But there's probably a better way to supress it. I've been running the same carbon filter since germination so maybe it's already exhausted. IDK

If it's a new filter from when you started your grow it's not the problem. I recommend you run a second filter in the room your tent is in. That should take care of those leftover smells.

My 2 cents. You wouldn't pick say a green banana off the tree and eat it nor would anyone pick an unripened peach and munch on that ether. Same applies with cannabis. If you harvested that plant you now you may aswell have not put all the time and energy into setting it all up and growing those plants.

Yeah, a new filter and fan, can work wonders.
How hot is it in there? If it's not too far out of line you can just set the filter up vertically with the fan on top, without ducting, to use it as a scrubber. That really can help lower oder levels.
As everyone has indicated, it's a shame to have to cut early.

Oh man, those things have a lot of potential. They could double in size. Buds pack on a ton in the last 3-4 weeks. You easily could have 2-4 weeks left, and those things are the beginning of absolutely monster colas.

Get a second carbon filter, or change out the first one? Burn incense?

They would be weak, likely lacking a lot of cannabinoids, and maybe half the weight of what they could be. Still usable. Just sad.
