what time of year do outdoor plants show sex? dit has to do with shorter days right?

I was under the impression that plants showed sex once the days got shorter. is that all there is to it and if it is that simple, when should they show their sex?

Pre flowers show at the 5th or 6th node. fall or right before is when the buds start showing
